BACON RISOTTO
INGREDIENTS - SERVES 4 :6 rashers Hellers FF Ribeye Bacon RECIPE DIRECTIONS :Slice bacon into small pieces. Heat oil in a large heavy based frying pan. Add bacon and onion and stir fry for 3 minutes. Add rice and continue frying stirring occasionally for 5 minutes. Add kumara and 1/3 of the stock. Simmer for 5 minutes. Add remainder of the stock. Cover with a lid and simmer for 10 minutes. Add the peas and continue simmering for another 5-10 minutes or until the rice is cooked and the stock absorbed. If the stock is absorbed before the rice is cooked, add 100 ml of water. Adjust seasoning if necessary. Sprinkle with Parmesan cheese - serve with a green salad. |
