Mexican Lamb Burger Tortilla

What you will need

  • Corn Salsa:
  • ½ can corn kernels drained and rinsed or 2 fresh cobs kernels removed
  • 5 sliced jalapenos roughly chopped
  • 3 tomatoes core removed and then diced
  • 1 handful fresh coriander leaves roughly chopped
  • 1 lime zest and juice
  • Creamy Guacamole:
  • 1-2 Avocado
  • 4 tbsp sour cream
  • 1-2 lime juiced
  • 4 Hellers NZ Lamb burgers
  • 4-6 tortillas
  • 3 iceberg leaves roughly chopped

Instructions

  1. Place all the ingredients for the corn salsa into a small bowl and toss together well. Season with a little sea salt and leave to infuse flavours
  2. Smash the avocado roughly in a small bowl with the lime juice, fold through the sour cream and season with sea salt to taste
  3. Panfry or bbq the lamb burgers till golden and thoroughly cooked. Slice into strips and set aside somewhere warm
  4. Spray each side of the tortillas with a little olive oil and pan fry over medium heat until they begin to puff up and turn golden
  5. To assemble spread guacamole in the middle of each tortilla, add the chopped ice burg lettuce, add several lamb burger slices, and then top with corn salsa and serve
  6. Serve with extra jalapenos on the table for those who like it hot!
