Vietnamese style New York Porker baguette with sriracha mayo and coriander

What you will need

  • ½ cup mayo
  • 1 - 2 tbsp Sriracha hot sauce, or to taste
  • 1 pack Hellers New York porker sausages
  • 2 small carrots
  • ½ telegraph cucumber
  • 1 tbsp lime juice
  • 1 tbsp fish sauce
  • 1 large baguette, split length ways or 4 small baguettes
  • ½ cup coriander and mint leaves

Instructions

  1. Sriracha Mayo - Mix ingredients together.
  2. Grill or fry the sausages until cooked, then slice in half length ways on the diagonal.
  3. Meanwhile peel the carrots, and then use a peeler to create long thin strips. Do the same with the cucumber. Toss the cucumber and carrot with the lime juice and fish sauce.
  4. Cut the baguettes down the middle and spread generously with the Sriracha Mayo on both sides. Fill with the cucumber and carrot strips, sausage slices, and top with the fresh herbs and a drizzle of mayo.
